From Vincent Francoul at the Minnikahda Club.
  • Servings: 5

  • (2) Full racks of 3 down pork spareribs
  • (2 Tbsp) BBQ Rub: Salt
  • (4 Tbsp) BBQ Rub: Sugar
  • (2 Tbsp) BBQ Rub: Ground cumin
  • (2 Tbsp) BBQ Rub: Ground black pepper
  • (2 Tbsp) BBQ Rub: Chili powder
  • (4 Tbsp) BBQ Rub: Paprika
  • (1 3/4 cups) Basting Sauce: White vinegar
  • (2 Tbsp) Basting Sauce: Tabasco sauce
  • (2 Tbsp) Basting Sauce: Sugar
  • (1 Tbsp) Basting Sauce: Salt
  • (1 Tbsp) Basting Sauce: Ground black pepper

Preheat oven to 180F.

Rub ribs with the BBQ Rub mixture.

Place ribs on a baking sheet and cook for 3 hours (do not turn).

Let cool, refrigerate covered.

Cook ribs over low charcoal with racks set as high as possible - about 5 minutes per side, light crust on the outside, and heat throughout.

Longer the cooking time the better.

Remove from grill, cut between bones, serve and enjoy
