Cream of Wheat from Fresh Wheat Berries
Cream of Wheat is a hearty and nourishing breakfast dish that you can customize to suit your preferred flavor. You can make it as basic as just wheat and water, or load on the fruits and berries, sugar, or anything else you like. Pictured is a blueberry Cream of Wheat with honey added as a sweetener

Ingredients

  • (1/2 cup) Wheat Berries - 1 lb
  • (2 cups) Water
  • (1 cup) Milk
  • (1/4 tsp) Salt
  • (1-2 Tbsp) (optional) sugar, honey, or maple syrup
  • (1-2 Tbsp) (Optional) Butter

Instructions

1. Grind the wheat

Grind wheat berries on a coarse setting until they resemble fine sand or cornmeal—coarser than flour.

2. Cook the cereal

• Bring water, milk, and salt to a simmer in a saucepan.

• Slowly whisk in the fresh coarse-ground farina.

• Reduce heat to low and cook 10–12 minutes, whisking frequently.

• When thickened, remove from heat and add sweetener or butter if desired.

• Let rest 2 minutes to finish thickening.

Texture Adjustments

• Thicker: cook longer or add 2 tbsp extra farina.

• Thinner: add 1/4–1/2 cup more liquid.

• Ultra smooth: blend briefly with an immersion blender after cooking.

Flavor Variations

Cinnamon–Brown Sugar

Add 1/2 tsp cinnamon and 1–2 tbsp brown sugar.

Maple & Cream

Top with maple syrup and a splash of cream.

Vanilla–Almond

Add 1/2 tsp vanilla and 1/4 tsp almond extract.

Savory Version

Skip sugar; add butter and a pinch of black pepper
